My Dad's Iphone Birthday Cake


I had the most splendid day yesterday. The Kansas City Chiefs won against the 49ers (which meant Mr. Incredible was in a good mood), I gorged myself on my mom's home cooking, we celebrated my dad's 56th birthday with extended family and enjoyed a piece of the Iphone cake I made for his party. Family + Food = a great day. Can I interest you in some food pornography? 

 
On the menu...Lechon, which is delicious roasted pork. The best part is the crisp skin.

And for dessert...Fruit salad with young shredded coconut, coconut jelly and tropical fruit.

And Dad's birthday cake of course. I made it look like an Iphone with a Facebook front because, well, he's fond of both :) 


The cake is called a "Hummingbird Cake" and is made with banana, crushed pineapple, pecans and covered with a white chocolate ganache. It had good flavor and was wonderfully moist. I then covered and decorated it using marshmallow fondant (recipe here). Happy Birthday Dad!

Ingredients

3 cups all-purpose flour
1 1/2 cups white sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 c melted butter
1/4 cup vegetable oil
3 eggs
1 (8 ounce) can crushed pineapple with juice
2 teaspoons vanilla extract
3/4 cup chopped pecans
2/3 cup mashed bananas
Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round cake pans.
2. Combine the flour, sugar, salt, ground cinnamon and baking soda. Add the oil and well-beaten eggs, stir by hand, until moistened. Stir in the vanilla, pineapple, nuts and bananas.
3. Spoon batter into the prepared pans. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes. Let cakes cool in pans for 10 minutes. Then turn out onto racks to cool. Frost with Cream Cheese Frosting.

    1. Such an awesome cake. I love all of the fondant "updates", LOL!

    2. Hummingbird Cake - printed and added to recipe file. The banana/pineapple/white chocolate combo sounds so sinful.

    3. Pancit! One of our dear friends made some pancit for a party over the summer it was SO good. I wish I had that (or adobo) for lunch instead of this crappy frozen meal.

    Ali, I grew up around all this food but I only know how to make adobo! I don't know why I haven't learned my mom's pancit recipe. It maybe the next post :)
